Obtained from selected walnuts, this sauce is one of the most delicate specialties from Italy. Following an ancient consuetude, it is used to enrich some particular cuts of pasta from the Liguria and Piedmont regions of Italy such as Pansotti (Stuffed Pasta), as well as to garnish roasted or boiled white meats. Today it’s delicateness is appreciated also on noble fishes and special salads.
