4 Cheese & Sun Dried Tomato Kamut Chiocciole

Ingredients:

  • Felicetti Monograno Kamut Chiocciole
  • 1/2 cup all purpose flour
  • 1 1/2 cup of milk
  • 1/2 cup grated Gruyere cheese
  • 1/2 cup grated Pecorino Romano
  • 1/2 cup grated asiago cheese
  • 1/2 cup grated mozzarella cheese
  • Sun dried tomatoes
  • 1 tbs. of minced parsley
  • 1 tbs. of minced basil
  • Seasoned Italian bread crumbs
  • Extra virgin olive oil
  • 2 tbs. of butter
  • Salt and pepper

Directions:

Preheat the oven to 375°F. Bring a large pot of water and salt to a boil and add the Chiocciole pasta. In a separate pot, add the butter and stir on low heat until melted. Then whisk the flour into the butter and slowly incorporate the milk continuing to whisk until you get a roux (creamy texture). Once ready, add salt and pepper.
In a separate mixing bowl add the roux, pasta (after straining) minced parsley and basil and all 4 cheeses, mix well. Prepare a baking dish by spraying the inside with non stick spray, add the pasta and sprinkle with bread crumbs and chopped sun dried tomatoes. Bake for 20-30 minutes and serve. Enjoy!
