Acetum was the first company to study and implement the most professional grading system on Balsamic Vinegar of Modena PGI:“The Leaf System“. Today this is the only independently (3rd party) certified system based on sensory and laboratory analysis. It is used by a majority of the producers in the industry.

Flavor:A zesty, slightly acidic taste. Light in aroma and consistency. Suggested Usage:Salad dressings or everyday use.

Flavor:A round and brisk taste, and a delicate aroma. Suggested Usage:Marinades, BBQ’s and steamed vegetables.

Flavor:A full-bodied taste and an aromatic, well-balanced aroma. Suggested Usage:Roasted meats and fish, to dip bread, or to make your own sauces or reductions.
